Ayala Rose No.8
Rose No.8 is a limited edition cuvee, and a true reflection of the refreshment Champagne Ayala has been undergoing recently. Crafted exclusively from Premier and Grand Cru vineyards of the Montagne de Reims, the historic birthplace of Champagne Ayala, Rose No.8 is first and foremost a great Champagne, made from grapes picked during the exceptional 2008 harvest, already celebrated as one of the best of the last few decades.
The name refers both to the symbolism of the number 8 – of renewal and creation – and to the 8 years necessary for the elaboration of this wine. The result is a festive and refined wine, perfectly representative of Ayala’s fresh and elegant style. This cuvee also shines thanks to its creative and innovative graphic conception: the distinguished label and original lines of the gift case echo the femininity and modernity that characterize the House’s universe.
Color: A light shade of powder pink, clear and bright, with abundant bubbles.
Nose: Subtle, it is fresh and refined, revealing delicate aromas of strawberries, raspberries, blood orange and blackcurrant.
Palate: The attack is precise and sharp, leading to a subtle, tightly knit palate, featuring a lot of freshness and finesse. Notes of red berries and Bartlett pear, showing remarkable minerality through chalk and graphite notes.
Finish: Delicate and fine, it is elegant with a sophisticated finish, like a finely crafted, mineral lace.
On top of being a perfect summer aperitif, Rose No.8 can perfectly accompany sophisticated cuisine. Provenance and purity are keywords in finding the perfect match: a summer salad of nasturtiums, duck aiguillettes a l’orange, a salmon filet cooked rare with a miso sauce or a red fruit salad would be perfect.
