After blending the regular DVX each year, the winery sets some aside. They then add a small amount of Pinot Noir to give this sparkling wine its gorgeous color.

TASTING NOTES

Aromas of raspberry, white peach, and toasted bread dominate the nose on this wine, with notes of nutmeg and sweet orange marmalade. The round mouthfeel and soft mousse are complemented with a lovely toastiness and flavors of red apple and peach.

This wine would be lovely paired with a fall salad with fuyu persimmon and pomegranate, or a smoked salmon spread on toasted bread
