Vilmart & Cie Coeur de Cuvee 2011
Vilmart & Cie are generally considered one of the best growers in Champagne and are even compared to the powerhouse Krug. Like Krug, their Champagnes are very wine-like and are aged in wood containers. The Coeur de Cuvee is its outstanding creation and the 2011 vintage is a fine example. Created from vines over 50 years old, it is a blend of 80% Chardonnay and 20% Pinot Noir.
On the eye: Its straw-yellow color is accompanied with a fine persistent mousse.
On the nose: The first aromas of hazelnut and brioche awake the senses. After a few moments, with much of elegance, subtle notes of vanilla and dried fruit are married with more subtle lemony flavors. The nose is both elegant and powerful, which indicates a wine of great complexity and a beautiful harmony.
On the palate: Once in your mouth, aromas of butter, crème brûlée and spices (white pepper) blossom awaken taste buds. It is a generous ample but really fresh wine. After several minutes of tasting, the complexity and the scarcity of this wine give us an explosion of flavors in the mouth, a real aromatic festival!
Crayfish and porcini mushrooms, scallop tartare or a “foie gras” pan-fried will bring depth and a beautiful aromatic evolution.
