Blanc de noirs literally means 'white from black'. Blanc de noirs Champagne is incredibly rare and is made from 100% black grapes (Pinot Noir and Pinot Meunier). Although the resulting Champagne is white, it is usually a darker yellow color and tends to be full-bodied.

Blanc de noirs pair very well with food (especially red meats and cheeses).
