The Billecart-Salmon Louis Elisabeth duo is a gift box containing two cuvées: the Louis Salmon Blanc de Blancs and the Elisabeth Salmon Brut Rosé, both vintage champagnes. This "Brother & Sister" set was created in 2012 to honor the founders' union: Louis Salmon (Elisabeth's brother) who was the original oenologist, and Elisabeth Salmon herself.

CUVEE ELISABETH 2012

Created in 1988 as a tribute to Elisabeth Salmon, one of the House’s founders, this cuvée is set apart by its radiance, refined purity as well as unique character. This rare and refined wine embodies with subtlety the signature of the top Pinot Noir and Chardonnay terroirs. An ancestral savoir-faire that is reflected in the meticulous art of blending as well as the rigorous selection of a sought-after vintage.

The Cuvée Elisabeth Salmon 2012 vintage is the expression of the finest Pinot Noir and Chardonnay terroirs. It offers a unique and sensorial experience, the fruit of more than a decade of patience.

TASTING NOTES

On the eye: Its appearance is luminous, with soft, coppery shimmers and a sustained salmon pink hue.

On the nose: There is a refreshing sensorial experience of citrus peel and red berry jelly. With the exquisite sensation of a rich and complex aromatic generosity (Plougastel and Mara des Bois strawberries, pêche de vigne). Pretty, refined and mature olfactory notes that bring out the inimitable fragrances of sweet spices and wild raspberry pulp.

On the palate: A measured strength which is delicate and charming at the same time, with the harmonious maturing of flavors (mandarin, blood orange, and Reinette apple tart). An ample and full character in the mouth unveiling a chalky edge and persistent finish of citron zest as well as red and white currants.

PAIRING

This great and highly refined wine presents its personality with wonderful delicacy of texture and flavor. The aromatic charm of a rare mineral aspect to pair with beautiful poulet de Bresse with crayfish or a few Breton langoustines royales.

CUVEE LOUIS 2012

This cuvée was named in tribute to Louis, Elisabeth Salmon’s brother, who was passionate about oenology and highly involved in winemaking from the earliest creation of the House. Originating from the best parcels of the Côte des Blancs, the Blanc de Blancs vintage is endowed with purity and minerality.

TASTING NOTES

On the eye: Crystal-clear pale-gold color with delicate glints marked by shades of yellow and green. A persistent and sparkling effervescence.

On the nose: The first expression is distinctive for its elegant patina that’s nutty and complex, with flesh and pulp of citrus fruits (mandarin, yuzu, and pear in syrup). An aromatic profile of distinguished and sophisticated purity and a chalky, balanced and crystalline character (fresh honey and raw butter). An undeniable floral charm.

On the palate: A creamy sensation in the mouth with a beautifully chiseled finesse. Beautiful and refreshing balance of natural flavors (marzipan, flaky brioche, white fruits and white pepper). This powerful, soaring wine with majestic typicity prolongs its finish towards an aromatic persistence of incredible length (cardamom, fresh mango and lemon caviar).

PAIRING

The unique dimension of a great Blanc de Blancs, pure and intense, with a directness perfectly associated with its low dosage. Its potential and balance express a remarkable finesse worthy of the most splendid food pairings: a lobster risotto or Teriyaki-style king scallops a la plancha.
