This cuvée is an on-trade specialty with great gastronomic potential, a blend form the three vessels which make up the Perpetual Reserve, the blend aged in tank for a year and then, for good measure, aged for an extra year on its fine lees on natural cork. Almost as if it has been forgotten in the cellar! Best not forgotten, this one, such is its complexity, the savory notes of tobacco, iodine and even saffron perfectly poised; this is essentially a mature Chardonnay, the spices complemented by notes of dried apricot, honey and softly buttered toast.
