R. Pouillon Rose de Maceration
Biodynamic and organic Champagne is not the norm in a region where consistency is more important than singularity. When Roger Pouillon founded the label back in 1947, he leased land and grew grapes for other houses and made wine with whatever was left over. Subsequent generations built up and improved the winery as more of their ancestral parcels became available after contracts expired. Roger's grandson Fabrice took charge in 1998, and by 2003, he began the conversion of his 15 acres to organic and Biodynamic farming. This Rosé de Saignée is made with 100% Pinot Noir from Premier Cru plots in Mareuil-sur-Aÿ. The color comes from about 12 hours of maceration before the juice is bled off to ferment in neutral vats. Then, 80% of the wine is blended with an older vintage while the remainder is aged in used barrels. This process integrates tannin, freshness, and complexity. Simply the best Rosé for the money. Some time in the cellar will bring out the best.
Fuller-bodied, dry. Striking pink color in the glass with loads of cherry, raspberry, and citrus on the palate. Finishes with spice, minerals, and minty herbs.
